Cajun Sausage, Rice & Beans

A very talented lady cooked this for us and it's been a favorite in our family.  It's super easy and very tasty.

Ingredients
  • 1 lb. smoked sausage
  • 1 diced onion
  • 1 can diced green chilis
  • 1 can kidney beans
  • 1 can diced tomatoes
  • salt
  • pepper
  • cajun seasoning
  • garlic powder
  • dash of cayenne pepper
Directions
  1. Brown sausage
  2. Add vegetables and seasoning to taste
  3. Add water if necessary
  4. Simmer 30 min
  5. Serve over rice
Yields: 6-8 servings

Dad's Fried Rice

This is a great way to use up any already cooked rice you have in your fridge that you don't want to eat because your taste buds don't really call out for it.

Ingredients
  • vegetable oil (1 or 2 tbsp)
  • cooked rice
  • soy sauce (enough to get the right color/desired flavor for the amount of rice)
  • 1 or 2 eggs (according to preference)
  • frozen veggies
  • garlic powder
  • black pepper
Directions
  1. Heat up oil in frying pan (or wok).
  2. Add cooked rice and soy sauce, stir until sauce is evenly distributed
  3. Make small clearing in middle of rice to fry egg(s), scramble and mix with rice.
  4. Add frozen veggies and spices to taste.

Hawaiian Haystacks

This recipe is super easy and quick, and the toppings will help you empty out any small amounts of leftovers in the fridge. Serves 6 adults.

Ingredients:
  • 2 chicken breasts
  • 2 cans cream of chicken soup
  • About half a can of milk
  • A dash of Cayenne pepper (optional)
  • Black pepper to taste
Directions:

Cut the chicken up into bite size pieces and cook in a regular size saucepan. Add remaining ingredients. Cook enough rice for 6 people. Serve sauce over rice and then add as many or as little of the following possible toppings:
  • Shredded coconut
  • Grated cheese
  • Tomatoes
  • Raisins
  • Bell peppers
  • Chow Mein Noodles
  • Pineapple
  • Olives
  • Mandarin Oranges
  • Almonds
  • Anything else you can think of.
