Italian Sausage & Pasta Dish


  • 1 box spiral whole wheat pasta
  • 1 lb hot Italian sausage
  • 1 bag fresh spinach
  • 2-14 oz. cans diced tomatoes
  • garlic salt
  • pepper
  • Italian seasoning
  • parmesan cheese
  • monterrey jack cheese, grated

Remove casings from sausage and brown in large skillet. Add tomatoes and seasonings. Let simmer for 15 minutes. Add spinach and allow to cook down.

Cook pasta following directions on package. Drain well. Add pasta to meat mixture and add 2 tbl. parmesan cheese. Fold ingredients together. Sprinkle jack cheese on each serving.

Serves 8

Sherrie and I made this for some friends the other day and it turned out amazing! It was so good, the Jack cheese really helps top it off. It was super easy too. Thanks mom!

I made this for dinner tonight and it was so, so quick and fabulous. I used Chicken Italian Sausage so it was also light. A great last minute dinner.
